Gindo’s
Our classic Elote is a must have this BBQ season, great heat with a nice cooling factor from the cilantro. This recipe pairs well with our crab cakes.
1/4 C mayonnaise
1/4 C sour cream
2 tsp fresh lime juice
1 Tbsp chopped cilantro
1/2 C cojita cheese
2 Tbsps Gindo’s Original Hot Sauce
4 ears of corn
salt and pepper to taste
Mix mayonnaise, sour cream, Gindo’s Original, lime juice, cilantro and a pinch of sea salt if needed in a bowl.
Boil 4 ears of corn for 5-8 minutes and remove. Let corn cool enough to touch but still warm.
Brush corn with 1 tbsp Gindo's mixture and sprinkle with 2 Tbsp of cheese and a squeeze of lime. Add some fresh cracked pepper and serve!
