A must have holiday treat! If you are a blue cheese fan feel free to substitute blue cheese for the feta, or go half and half. If you have left overs, spread on a slice of bread for one of the best sandwiches you've ever had! Other limited craft sauce that would work with this recipe include: Ghost of Christmas Present, Ghost of Christmas Future and Gindo's Jalapeno Poblano
1 Tbsp mince garlic & shallot
8 oz cream cheese
2 Tbsp greek yogurt
3 Tbsp chopped parsley
1 tsp Gindo's Italian Bread Dip
6 oz feta or blue cheese
1/3 C kalamata olives
1 to 2 Tbsps Gindo’s Original
1 1/2 C chopped pistachios
1 Tbsp olive oil
Combine cream cheese and greek yogurt in a food processor and puree until smooth and creamy.
Add remaining ingredients and pulse until you have small chunks. Scoop cheese mixture into a small bowl and refrigerate for 1-2 hours.
While cooling, coarsely chop pistachios and add to a bowl.
Roll cheese mixture into 3/4" balls and roll each ball in the pistachios. Serve immediately, or cover and chill until ready to serve.
