INGREDIENTS
1 Tbsp mince garlic & shallot
8 oz cream cheese
2 Tbsp greek yogurt
3 Tbsp chopped parsley
1 tsp italian seasoning
6 oz feta or blue cheese
1/3 C kalamata olives
1 to 2 Tbsp Gindo's Original
1 1/2 C chopped pistachios
1 Tbsp olive oil
DIRECTIONS
1. Combine cream cheese and greek yogurt in a food processor and puree until smooth and creamy.
2. Add remaining ingredients and pulse until you have small chunks. Scoop cheese mixture into a small bowl and refrigerate for 1-2 hours.
3. While cooling, coarsely chop pistachios and add to a bowl.
4. Roll cheese mixture into 3/4" balls and roll each ball in the pistachios. Serve immediately, or cover and chill until ready to serve.
