Asian Inspired Pulled Pork

INGREDIENTS
1 lb pork tenderloin
1 Yellow onion chopped
1 Tbsp minced garlic
1 Tbsp Gindo's Honey Habanero
1 tsp shaved ginger
1 Tbsp olive oil
2 C chicken stock
1 Tbsp brown sugar
2 tsp chili powder
3/4 C white wine
1 Tbsp honey
1/4 C minced celery
16 dried prunes
2 Star anise
4 Sage leaves
Salt and pepper to taste

 

DIRECTIONS
1. Season pork with salt and pepper. Add olive oil, 1/2 Tbsp garlic, 1/2 chopped onion to skillet and bring to medium - high heat. Once hot, sear pork on both sides for 2 minutes each.
2. Remove pork from skillet and place in slow cooker. Deglaze skillet by adding half of 3/4 Cup of wine to skillet and scraping the bottom.
3. Add remaining ingredients to slow cooker, including the juice from your skillet. Set slow cooker to low setting, cover and cook for 8 hours.
4. Remove pork from slow cooker and shred in a separate bowl. Pour sauce from slow cooker in a medium sauce pan and bring to a boil. Remove from heat and blend together using electric mixer or immersion blender.
5. Serve on a bed of rice and steamed broccoli and enjoy!
