3 sweet potatoes finely chopped
2 bell peppers finely chopped
2 celery stalks minced
1 Tbsp minced garlic & shallot
1 yellow onion chopped
1 Tbsp Gindo's Honey Habanero
1 Tbsp Gindo's Hickory BBQ Rub
1 tsp Gindo's Italian Bread Dip
1/2 tsp sea salt
1/2 Lb chopped pancetta or bacon
2 Tbsp olive oil
3 minced sage leaves
1 sprig rosemary
3 sprigs thyme
cracked pepper to taste
1. Bring skillet to medium high heat and pan sear pancetta or bacon until browned (5 - 8 minutes). Remove from burner, drain and let cool.
2. Preheat oven to 425º. Combine all ingredients in a large mixing bowl or bag and toss together.
3. Transfer to a baking dish or cookie sheet and roast for 1 hour. Let cool and serve with turkey, chicken or fish.
