Here's a secret... After you season your chicken, pour out a 1/4 Cup of Gindo's sauce of your choosing. Using a spoon, begin spooning sauce under the skin of each breast. Continue until all the sauce has been used and then rub sauce into the meat using your hands.
Cooking Twine; approximately 11ft
1 Whole chicken
Gindo's sauce of your choosing
Cut approximately 11 ft of cooking twine. Join both end pieces and fold twine in half to give you approximately 5.5 to 6 feet of twine.
Locate the mid point on your twine and wrap around the neck of the chicken. Run the twine under the wings and along the side of the bird.
Run the twine under the legs and cross the two ends of twine, then wrap around both tips of the legs and cross one more time.
Run twine back under the side of the legs and continue running twine back up toward the neck of the bird until the two ends of twine meet. Once they meet, pull tight and tie two simple overhand knots.
