Gindo's Potato Leek

Gindo's Potato Leek

Ingredients:

  • 3 Tbsp. unsalted butter
  • 4 large leeks
  • 3 cloves garlic
  • 2 lb. Yukon gold potatoes
  • 7 cups low sodium chicken broth
  • 2 bay leaves
  • 2 Tbsp. Gindo's Green
  • 3 sprigs of thyme
  • 1 tsp. salt
  • 1/4 tsp. ground black pepper
  • 1 cups heavy cream

Directions:

  1. Chop leeks and potatoes. Melt butter in a large soup pot, add leeks and garlic and saute for 20 minutes. 
  2. Add potatoes, stock, bay leaves, Gindo's green, salt and pepper to the pot and bring to a boil. Then cover and simmer for 20 minutes. 
  3. Fish out thyme and bay leaves, then puree the soup using a blender. Add heavy cream and bring to a simmer. Taste and adjust seasoning as needed, serve, and enjoy!
