Gindo’s
This simple, light and creamy soup pairs perfectly as an appetizer or as a meal.
3 Tbsp. unsalted butter
4 large leeks
3 cloves garlic
2 lb. Yukon gold potatoes
7 cups low sodium chicken broth
2 bay leaves
2 Tbsps Gindo’s Jalapeno Poblano
3 sprigs of thyme
1 tsp. salt
1/4 tsp. ground black pepper
1 cups heavy cream
Chop leeks and potatoes. Melt butter in a large soup pot, add leeks and garlic and saute for 20 minutes.
Add potatoes, stock, bay leaves, Gindo's green, salt and pepper to the pot and bring to a boil. Then cover and simmer for 20 minutes.
Fish out thyme and bay leaves, then puree the soup using a blender. Add heavy cream and bring to a simmer. Taste and adjust seasoning as needed, serve, and enjoy!
