Our classic Pesto Genovese is seriously delicious. Spread on a sandwich, incorporate in pasta, cover baked chicken or toss in a spaghetti squash. So many possibilities! If you are using on pasta be sure to mix the pesto with a little of the hot water in which the pasta was cooked. Here's another secret... use fresh grated parmesan.
2 C fresh basil ( 1 bunch )
2 Tbsp pine nuts
2 Garlic cloves
1 to 2 Tbsps Gindo’s Jalapeno Poblano
3 Tbsp olive oil
1/2 C parmesan cheese
Pinch of sea salt
Combine basil, pine nuts, garlic and pinch of sea salt in a food processor and process until very finely minced.
Add cheese and process into an even paste.
Combine oil and Gindo’s Jalapeno Poblano and whisk together. Add to food processor and process until a creamy consistency is achieved.
