Gindo's Creole Chicken

Gindo's Creole Chicken

Ingredients:

  • 2 chicken breasts, cubed
  • 1 Tbsp. olive oil
  • 2 Tbsp. Gindo's Original Red
  • 1 cup chopped onions
  • 2 cups cooked rice
  • 2 cups prepared red beans
  • 1 cup chicken stock
  • 2 Tbsp. favorite Creole seasoning (we use Andouille Creole from 360 Flavor & Spice!)

Directions:

  1. Heat oil in a large skillet and then coat chicken evenly with seasoning. 
  2. When hot add chicken and onions; cook until browned. 
  3. Add Gindo's Original, rice, red beans and saute for 5 minutes. 
  4. Add stock and simmer on low until liquid is absorbed (about 15-20 minutes).
