Gindo's Bangin' Red Sauce

  • 3 Lbs fresh tomatoes
  • 2 Tbsp olive oil
  • 1 tsp sea salt
  • 1 Tbsp fresh minced basil
  • 1 Tbsp minced garlic
  • 1 Tbsp minced shallot
  • 1/2 white onion chopped
  • 10 Sprigs fresh thyme
  • 2 Bay leaves
  • 2 Tbsp Gindo's original
  • 1/2 White onion
  • 4 oz Tomato paste ( or half can of tomato paste )
  • 1 tsp Italian seasoning


  1. Boil tomatoes in a stock pot until skin begins to peel. remove from water, peel off skin and remove seeds. ( boil for only 30-40 seconds )
  2. Heat oil and saute 1/2 Tbsp garlic & onion until browned.
  3. Add tomatoes, remaining garlic & onion, fresh basil, red wine, salt, Gindo's Original and Italian seasoning. Bring to a boil, reduce to low heat and simmer for 20 minutes.
  4. Remove from heat and blend sauce. Add other half of onion, bay leaves and sprigs of thyme tied together with cooking twine.
  5. Cover and simmer over low heat for 15 minutes. Last five minutes of simmer add fresh lemon juice and cracked pepper. Remove onion, thyme, bay leaves and enjoy!!
