Soups and sauces
Making a Bouquet Garni to flavor meals, soups and sauces is a great way to make use of an overabundance of fresh herbs in the house. I was tired of buying fresh herbs from the store and having to throw out half of them because I simply could not use them quickly enough. If I run into that problem now I simply plan to make soup for the week and use the remainder of my herbs in a Bouquet Garni. Simple. Tasty. Gindo's.
1 bundle Thyme sprigs
1 bundle Rosemary sprigs
1 bundle Sage sprigs
Simply combine all of your herb bundles and tie them together with your cooking twine. Then submerge in soup, tomato sauce or slow cooker. Take note of what herbs you are using in your bouquet Garni and flavor your dishes accordingly.
Chicken based soups: Rosemary, thyme, sage and parsley
Tomato Sauce: Thyme, oregano and parsley
Vegetable soups: Rosemary, thyme, lavender and tarragon ( Herbs De Provence )
