Bay Scallop Paella

  • 1 cup uncooked rice
  • 2 Tbsp. paprika
  • 3-4 threads of saffron
  • 2 cups chicken stock
  • 1 lb bay scallops
  • 1 Tbsp. olive oil
  • 1 Tbsp. Gindo's Original Red
  • 1 cup tomato sauce
  • 1 cup tomatoes, chopped
  • 1 cup red bell pepper, chopped


  1. Heat oil in a large pan until hot. 
  2. Add rice, Gindo's Red, 1 Tbsp. paprika, onion, and garlic and saute until brown. 
  3. Add stock, 1 Tbsp. paprika and tomato sauce. Cover and simmer for 30 minutes. 
  4. Add scallops, tomatoes, bell pepper, and saffron. Simmer another 25 minutes. Spoon and serve.
