A traditional Lebanese garlic spread light and fluffy, packed with a savory citrus blast of flavor. This recipe is our first collaborative recipe with Garlic Breath Farm in Elburn, IL. using their organic Porcelain Music Garlic. Pair our Toum with any of our sweet heat craft sauces, Gindo's Honey Habanero. You can use Toum as a spread for sandwiches, fish, steak and chicken. The flavor is intense and has become my new obsession. Enjoy!
2 -3 bulbs of garlic ( 12 - 14 cloves
1 Tbsp kosher salt
2 lemons freshly squeezed
1 1/4 C sunflower or grape seed oil
Slice each garlic clove in half length wise and remove the garlic germ.
Place garlic in food processor and add salt. Chop until garlic takes on a paste like consistency.
Begin adding alternating small amounts of lemon juice and oil, pulsing the garlic after each addition.
Once all ingredients have been added, pulse one more time and Toum should be at desired consistency. Enjoy!
