1 acorn squash halved and sliced in 1/4" slices
1 Tbsp butter
2 tsp Gindo's Original
1/3 C grated parmesan cheese
1 tsp italian herbs
2 Tbsp minced fresh herbs ( we minced fresh rosemary, thyme, sage and parsley )
1 Tbsp minced garlic & shallot
Salt and pepper to taste
1. Preheat oven to 400º. Heat butter over medium high heat and add garlic and shallots. Saute until fragrant 2 - 3 minutes
2. Add Gindo's Original and reduce sauce, about 5 minutes. Remove sauce from heat and let cool slightly
3. Slice acorn squash into 1/4" thick slices and toss with Gindo's reduced sauce and remaining ingredients.
4. Spread squash slices out evenly over a parchment lined baking sheet and bake for 30 minutes. Remove, let cool serve and enjoy!
