This simple, yet delicious salad dressing has become a favorite in our household. We don't buy premade dressings anymore. My mom even loves it, and she has a very low tolerance for spicy foods. The flavor is subtle, fruity, fresh and a little tangy. The heat is very low, almost more of a warming sensation. You can always turn up the heat though. Just add more Gindo's!
On an additional note, if you're strapped for time, as we often are, a salad to make can be as simple as mixed greens (we love Mighty Greens fresh green blends from their farm in Elburn, IL), crumbled Feta cheese and pine nuts. It's low maintenance and will compliment anything like eggs, soup, sandwiches, or a home cooked dinner.
