4 Whole zucchini
1/2 C grated hard farmhouse cheese, such as Gabriel or Desmond
2 Tbsp Gindo's Jalapeno Poblano Green in a small bowl
2 Tbsp softened butter
salt and pepper to taste
1. Preheat oven to 350º. Slice zucchini in half, lengthwise. Butter a shallow baking dish and arrange the zucchini, cut side up inside the dish.
2. Spread butter on each zucchini and then paint on Gindo's Green with a basting brush. Finally sprinkle cheese over zucchini.
3. Bake in preheated oven for about 20 minutes, or until zucchinis are tender and the cheese is bubbling and golden brown. Serve immediately.
