Gindo's Giardiniera Sauce takes that same combination of vegetables and heat and puts it through a vinegar base instead of oil — so it pours and pairs more like a hot sauce than a jarred relish. It's still made fresh, in small batches, the same way we make every Gindo's sauce — real peppers, real vegetables, real heat.

If you've ever lined up five hot sauce bottles on your counter and wondered why they all taste... kind of the same, there's a reason. Most of the hot sauce on grocery store shelves is built around the same formula: peppers, vinegar, salt, and water, cooked down and bottled to last forever on a shelf. That formula isn't wrong. It's just not what we do. At Gindo's, we've been making hot sauce from fresh peppers in small batches in Illinois since 2011.
