Pan American Seed Company is a local seed producer and farm with worldwide credibility. We met them at one of our farmers markets and they invited us to pick a bunch of their one of a kind peppers and create hot sauce that showcases the unique peppers' potential.

Here's some info directly from PanAmerican:  "This is actually made from a completely different species of peppers, Capsicum baccatum, commonly known as Aji (“ah’-hee”) peppers. Normally these are only enjoyed in South American cuisine because typically they are late to ripen and don’t do that well in shorter growing seasons. We at PanAmerican worked together with the University of Wisconsin to select a variety that has all the flavor found in traditional Peruvian and Ecuadorian cuisine, but that can be grown even in as short a season as you get in Wisconsin."

TASTE:  The flavor is rich with a bit more perfume and hints of citrus than we find in typical North American hot peppers.

TRY WITH:  Breakfast potatoes, scrambled eggs, fried chicken, ground beef, pasta bolognese, vegetable stir-fry, or mix with aioli or cream cheese for a dip or sandwich spread. Gindo's Aji Rico sauce shines on just about anything and can be a great all-around everyday hot sauce!
